
Beet Gazpacho
Ingredients
- 2 large beets, cooked, peeled and diced
 - 3 chopped garlic cloves
 - 1 red onion, minced
 - 1 tbs. Dijon mustard
 - 1 tbs. Sherry vinegar, or more to taste
 - 1 ½ cups ice cold water
 - Salt and Pepper to taste
 - 1 Optional garnish: chopped chives or diced avocado
 
Place all ingredients in a food processor and puree. Season to taste
